Family weekend fun and meeting Martha

As mentioned here we had a busy weekend. Two of our family friends celebrated an important milestone for their little ones, Liam my godson celebrated his 2nd birthday and Terd had a Christian dedication.

I just realized now that I’ve been making Liam’s birthday cake every year. For his first birthday I made a cars themed cake and for this year a Mickey Mouse themed cake. Liam love Mickey Mouse and you would find him quietly seated in front of the TV whenever the famous Disney character is on.

This is just a simple cake using basic shapes. I used a circle cookie, flower and little bird cutters. I kept asking Vierte for approval if the cake looked nice and he would make a comments like “Ma put more here and here” and of course I obliged. When I told him I’m done he proudly declared “You did a good job Mama!”

I made poured fondant by mixing water and left over fondant from the cake, melt it inside the microwave for 20 seconds. Initially planned to fill the cupcakes with chocolate ganache but was press for time since I had to bathe Vierte, prepare our clothes, and clean the house.

Over the weekend Coy and I realized that Vierte really is not a baby anymore (but I do insist that he still is). He actively joins party games without any help from us and interacts with other kids. He use to be so shy and would always stay beside us.

The highlight of my weekend was meeting Martha Stewart. She was so nice and even arrived 20 minutes before the schedule. I only have one picture with her a big thanks to Kari of Chef and Steward for taking the photo.

Ginataang Mais (Corn and Sticky Rice Pudding with Coconut Milk)

This year I found several Pinoy food bloggers around the world which led me to a group called Kulinarya Cooking Club which aims to promote Filipino Food.

This month’s theme hosted by Adora from Adora’s Box and Diona from Tita Flips is “White Food.” For my first Kulinarya entry I chose something that I haven’t prepared before and a dessert that I’ve craved since last month – Ginataang Mais.

Ginataan means food cooked with gata (coconut milk) which is extracted from grated coconut milk mix with warm water. You will find various Filipino desserts made with coconut milk ginataang bilo-bilo, ginataan halo-halo, Bicol express, and adobo sa gata to name a few.

This dish suits the bed weather Manila is experiencing right now because of Bagyong Egay. Ginataang Mais is best eaten warm.

Ginataang Mais (Corn and Sticky Rice Pudding with Coconut Milk)

Ingredients:

  • 1 cup    glutinous rice
  • 4 cups  water
  • 1 can    whole corn kernel, 150 fl.oz.
  • 1 can    coconut milk, 14 fl.oz or 3 cups fresh coconut milk
  • 1 can    coconut cream, 150ml
  • ¾ cup  sugar

Procedure:

Combine 4 cups of water and glutinous rice in a pot, once it boils lower the heat. Add corn kernels, coconut milk, coconut cream and sugar let it simmer for 20 minutes and continuously giving it a good mix with your wooden spoon till you get the right pudding consistency you prefer.

The moon is broken

Luckily, we had a good view of Mr. Moon last night. Excitedly we told Vierte to observe the moon till it disappear. As expected when we said it would disappear he replied with “Ma it’s not sunny. The moon will stay cause it’s sleeping time”

 

Checking Mr. Moon every 10-15 minutes and showing him photos taken he then notice that  indeed it was getting smaller. Last night’s lunar eclipse is said to be second longest in century.

Vierte kept telling us that the moon is broken because the cow ate the moon.

Emirati Recipe: Lamb Makhtoum


Ginger over at gingerAndscotch started a cooking local project you can read more about it here. A fabulous idea right! What better way to appreciate the culture where we live if we don’t at least try their dish. If I can’t speak Arabic might as well learn to cook local dish.

Even before being part of FIA I have been reading Emiratican Kitchen and have bookmarked her recipe for Chicken Makhtoum. She noted on her post that lamb would be a delicious substitute to chicken.

When I told C that we’re having a local dish for dinner he immediately inquired if I prepared an emergency backup meal in case they won’t like it. Nope I don’t have any backup and they can order take out. I already know that Little V liked the lamb dish because he was beside me all the time tasting and checking if it’s yummy or not. He liked it so much that asked for rice and sauce for snack.

Recipe Source:
Emirati Recipe: Lamb Makhtoum

1 kilo Lamb
2 Tomatoes, chopped
1 tbsp Canola Oil
1 medium size Onion
1 cup Yogurt
1 tsp Salt
2 tbsp Tomato Paste
1 tbsp Arabic Spice mix
1 cup frozen Garden Peas



In your blender mix tomatoes, onion, yogurt, tomato paste, salt, Arabic spice mix and blend 
till you get a smooth texture. Meanwhile heat oil in a large pan and saute lamb meat till brown. Add yogurt mix over medium heat for 10 minutes. Mix frozen peas and cook for an hour over low heat till meat is soft.

We enjoyed Lamb Makhtoum with Vegetable Rice Pilaf and Pappadam
