Recipe: Cheese Cupcakes

Cupcakes loaded with cheddar cheese! I can’t decide whether its savory or sweet but I can guarantee you that the cupcakes are delicious. Chloe sells cupcakes at her Kuya V’s basketball practice and these always gets sold out. The batter has cheese in it and topped with more cheese. My kids have been using their own money to buy stuff that they want while we (the parents) cover every thing they need. I will share more how we are (hopefully) teaching them to be more responsible with managing their finances well. We have always baked using grams, below I roughly converted it in cups. Recipe yields to more than 2 dozens depends on the size of your cupcake pans.

This is simple stir fried bokchoy is my favorite way to prepare this vegetable. It’s quick, easy, healthy and yummy. I prepare this as a side dish for fried meat or baked fish. Great for lunch box too. I get our Bok Choy stash from WestZone supermarket and during the winter season at the Farmers Market.

Quinoa is high and protein and the only plant-base super food that contains 9 amino acids in one product. So.. I find sneaky opportunities to add quinoa to any dish – fried rice, chicken porridge,  and now MEATBALLS! My kids squirmed at the sight of quinoa because it tastes weird. I declare this a #MomWin because the little humans I feed did not complain at all. I am making a big batch to freeze to keep me sane on a lazy day.

#LetsMakeLunchFun Box with the Colors of the UAE Flag

Our second home, the United Arab Emirates is celebrating it’s National Day on the 2nd of December. A few weeks back, I pack a #LetsMakeLunchFun box with food representing the colors of the UAE flag. Tsokolate or Sikwate (Filipino Hot Chocolate Drink)

Lately, I have been reminiscing the summers spent at Tagum with my Lola Mommy (Papa’s mother).  As soon as the school is over I commute via public bus and travel for 1 hour and 30 minutes to Tagum, Davao del Norte. I have this vague memory of walking under cacao trees at our ancestral home looking for ripe cacao fruit. Once I spotted one and get a confirmation from Lola that I did find the right one, we would break it open and enjoy it’s fresh white meat. “Oh wag mo itapon yung buto” (Don’t throw the seeds) Lola would remind me. I was tasked to gather, wash and dry the seeds under the sun making sure that birds won’t steal them away. Once the seeds are dried, Lola would roast and grind it before she makes tsokolate or sikwate. The house would smell amazing. We would always enjoy our tsokolate with Tagum biko – a rice cake with a sweet glaze on top. The biko we get from Tagum is like no other, I have sacrificed luggage …

Do you have those days where you just don’t have any idea on what to feed your family? I have plenty. I try my best to plan our weekly menu but sometimes life as a stay-at-home mom gets in the way. Why? I wear several hats – a chef, blogger, main cleaner, teacher (my eldest it seems have exams every week), playmate and referee…are just a few hats I wear. It is overwhelming. As much as I want to prepare fresh cooked food every meal time for my bunch (kids + husband), I sometimes just don’t have the energy (and time) to do it.  So I rely on store bought frozen food a few times a week (specially for lunch box) to get by. Choosing the right one is quite a bit of a challenge because I have to make sure that it is not made of junk and that my kids will eat it.
