#LetsMakeLunchFun Box with the Colors of the UAE Flag

Our second home, the United Arab Emirates is celebrating it’s National Day on the 2nd of December. A few weeks back, I pack a #LetsMakeLunchFun box with food representing the colors of the UAE flag. Packed inside our lunch box are apples, edemame, olives, yoghurt chicken & rice, and dates.   The flag colors represents the following: RED  – symbolize the sacrifice of previous generations who laid the foundations for the Union & sacrifices of the nation’a martyrs to safeguard UAE, its achievements and gains GREEN – symbolizes growth and prosperity WHITE – symbolizes UAE’s charitable contributions and the states approach to supporting the security and peace in the world BLACK – reflect the strength of Emirati citizens.     This post is part of the UAE Mom Bloggers Blog Hop for UAE’s National Day on December 2. Tsokolate or Sikwate (Filipino Hot Chocolate Drink)

Lately, I have been reminiscing the summers spent at Tagum with my Lola Mommy (Papa’s mother).  As soon as the school is over I commute via public bus and travel for 1 hour and 30 minutes to Tagum, Davao del Norte. I have this vague memory of walking under cacao trees at our ancestral home looking for ripe cacao fruit. Once I spotted one and get a confirmation from Lola that I did find the right one, we would break it open and enjoy it’s fresh white meat. “Oh wag mo itapon yung buto” (Don’t throw the seeds) Lola would remind me. I was tasked to gather, wash and dry the seeds under the sun making sure that birds won’t steal them away. Once the seeds are dried, Lola would roast and grind it before she makes tsokolate or sikwate. The house would smell amazing. We would always enjoy our tsokolate with Tagum biko – a rice cake with a sweet glaze on top. The biko we get from Tagum is like no other, I have sacrificed luggage …

Do you have those days where you just don’t have any idea on what to feed your family? I have plenty. I try my best to plan our weekly menu but sometimes life as a stay-at-home mom gets in the way. Why? I wear several hats – a chef, blogger, main cleaner, teacher (my eldest it seems have exams every week), playmate and referee…are just a few hats I wear. It is overwhelming. As much as I want to prepare fresh cooked food every meal time for my bunch (kids + husband), I sometimes just don’t have the energy (and time) to do it.  So I rely on store bought frozen food a few times a week (specially for lunch box) to get by. Choosing the right one is quite a bit of a challenge because I have to make sure that it is not made of junk and that my kids will eat it. #LetsMakeLunchFun for our Family

I have been using the hashtag #LetsMakeLunchFun on Instagram for a while now, with an aim to challenge myself and inspire others to prepare healthy fun lunch box food for our kids.  Last September 2016, I invited my IG followers to use the hashtag and join me in my little campaign. The challenge to pack a healthier school food began when my son asked me to pack extra food for his friends. To make things clear, all his friends bring packed lunch in school but it consist mostly of sandwich, cupcakes or cookies and a juice box. Absolutely nothing wrong with the food they have but I think what makes our packed lunch different is the way it is prepared. #LetsMakeLunchFun is not limited to lunch box packing, it can be any meal – breakfast, snack or dinner. Remember that our goal is to make our family eat healthier, one meal at a time. Recipe: Pan Grilled Chicken

One concern I had before moving to Dubai was availability of ingredients and products I was used to using specially when it comes to cooking. I packed a good stash of ready made sauce mix to make caldereta and sinigang. Why? I was not a confident cook because while I helped in the kitchen someone always did the cooking for me. The good news is Filipino products is widely available in small and major groceries here – your favorite Pinoy corned beef, canned tuna, suka, toyo and Mama Sita’s oyster sauce are sold here. In the Philippines we celebrate Christmas season the longest, from September until January. Yes, by September Filipino families start decorating for the season, carols are played and countdown begins. My first Christmas dinner for 2016 happened last November 21 with Spinneys Dubai.
