Banana Raspberry Smoothie

We are definitely feeling Mr. Suns’ heat here in the sandpit. The weather is still nice enough to stay outdoors and enjoy some smoothie. Stored some on our Sili Squeeze for Vs school lunchbox. Banana Raspberry Smoothie Recipe: 1 ripe Banana 1 cup Raspberries (I had frozen ones from our fruit market stash) 1 1/2 cup Yoghurt 1/2 cup Milk 3 tbsp Honey 1 cup ice cubes (if you’re not using frozen berries) 1 tbsp Chia seeds Blitz everything in your blender. Sprinkle some chia seeds and serve.

Healthy Chicken Nuggets

I am guilty of feeding LittleMan V fast food and store bought chicken nuggets. He absolutely likes them and if given a chance to eat nuggets everyday he would. I have tried several recipes for a healthy chicken nuggets and V would either complain that it was not soft (not like the ones from McDo) or just didn’t taste good enough for him. It has been more than a month or two since I stopped buying frozen store bought nuggets and how he miss having them for breakfast or snack. Last week I prepared healthy chicken nuggets for his after school snack and he easily ate 8 pieces in one sitting and LittleMiss enjoyed them as well!   While planning for his school lunch, he once again requested that I prepare Mama’s healthy chicken nuggets.

Ube Cheesecake

For the past month I’ve been working on improving the taste of the Ube Cheesecake. Daddy C who is a big fan of Ube Cake requested that I re-create the taste of ube ice cream for the cheesecake. The first batch of ube cheesecake was baked using just mashed boiled ube  and the 2nd batch was enhanced with ube flavoring. I discussed the boys comments with Sandy my sister from another mother who lives in Vienna and she suggested I try making it again but this time use halaya (jam). See ube doesn’t have any distinct taste you need to add butter and salt to boiled one or macapuno to enhance it’s flavor.

School lunchbox week 3 and an Easy Puff recipe

Some of our lunchbox food this week is just a repeat if what V had two weeks back. He just insisted on not bringing his heavy thermal Sahara lunchbox. Since my V requests almost the same kind of lunch food I will try and feature something new every week. I was getting bored preparing the usual deli meat sandwich every morning, as I was staring at our fruit bowl full of red and green apples (Vs favorite fruit) a sudden craving for McDo’s apple pie happened.

Ginataang Munggo

I am talking to my sister via facebook, she’s in the office and even though storm Maring has left Philippines it still is raining back home. The recipe I am sharing today is perfect to give warmth to a rainy season. Ginataang Munggo is a mix of glutinous rice and green mung beans cooked with coconut milk and sweetened with either sugar or condensed milk similar to ginataang mais.   It’s 9 am and the kids are still sleeping. I am enjoying a little bit of “me quiet time” while reading the newest addition to our bookshelf – Momofuku Milk Bar. I am planning to prepare at least three recipe from the book every month. The husband has been giving me hints that he likes ginataang munggo, the dish was suppose to be a surprise for him to enjoy for afternoon snack but then the nearby grocery delivered the wrong item and didn’t bother to come back for my glutinous rice. My dear husband had to go down and buy me glutinous rice a key ingredient …
