Minions Chicken Nuggets Bento Lunch Box

A few weeks back I worked on a bento lunchbox workshop, the goal was to turn three boring grocery food –  nuggets, sausages & chicken popcorn to something that is more inviting and fun to look at. You first eat with your eyes. I hate to admit it but when given a choice between my homemade chicken nuggets to store bought ones, my children almost always prefer the latter because of it’s crunchy outside texture. Yes, I give in and buy the frozen ones in the grocery for those days that I don’t have the energy. We love Minions! Looking at Bob, Kevin and Stuart’s funny faces automatically brightens up a tough day. Agree? I made use of sliced cheese and nori sheets to make the minion face. Back in Dubai. Back to School

It’s been 10 day’s since we got back from our vacation and I’ve been busy unpacking and keeping the house back on track. Everything seem so new yet familiar (if that makes any sense).  I hope to get back to blogging weekly and post a review on our new favorite product – Yonanas.  Vacation is certainly over as it’s back to school for Kuya V this week.  He requested for our homemade healthy chicken nuggets for his back to school lunch. I’ve made a few changes on the recipe (added broccoli) and hope to post recipe soon. For now you can get recipe here or you can pick-up the September issue of Good Housekeeping. So happy that our very own chicken nuggets was selected as one of the suggested packed lunches along with other easy yummy recipes.   

Healthy Chicken Nuggets

I am guilty of feeding LittleMan V fast food and store bought chicken nuggets. He absolutely likes them and if given a chance to eat nuggets everyday he would. I have tried several recipes for a healthy chicken nuggets and V would either complain that it was not soft (not like the ones from McDo) or just didn’t taste good enough for him. It has been more than a month or two since I stopped buying frozen store bought nuggets and how he miss having them for breakfast or snack. Last week I prepared healthy chicken nuggets for his after school snack and he easily ate 8 pieces in one sitting and LittleMiss enjoyed them as well!   While planning for his school lunch, he once again requested that I prepare Mama’s healthy chicken nuggets.
