Chicken Arroz Caldo with Quinoa

We’ve been hit by a nasty flu this past week, thankfully all of us are now feeling great. Arroz Caldo is a simple dish that is hearty and comforting.         This dish is made during the cooler months or when someone is sick. It is usually made with a mix of glutinous and regular rice, chicken, garlic and lots of ginger. I’ve made a healthier version by adding white quinoa to rice. It’s a great way to introduce quinoa to your family, the chicken broth and ginger slightly masked the nutty flavor of quinoa.  Linked to What Kids Eat Wednesay

Philippines has a big Chinese population and we have inherited a lot of their traditions. Binondo is the capital’s China town where you can find the famous Eng Bee Tin which sells traditional Chinese sweets like hopia, ampao rice, mooncake and tikoy. Celebrating Chinese New Year is not complete if one doesn’t get to eat tikoy (Nian Gao), coated with egg and fried. Consider yourself lucky when you receive one as a gift because it means that the person wishes you luck. In Dubai we can’t find any stores selling Nian Gao, worry not because it is easy to make.

We have a bad case of sniffles this week, it all started when Daddy C was away on a business trip. I should really start taking driving lessons soon, we had to wait 30 minutes for a cab to pass by outside the hospital. Hungry sick kids and no cab just spelled tantrums. Bulalo soup is a bone broth stock that is very simple to make and just require patience if you want to do it the traditional way. The key to a tasty broth is simmering beef bones for hours. Dubai’s cold weather is just the perfect time to enjoy a warm soup. We had this for lunch paired with tuyo and cooked jasmine rice.

Banana Raspberry Smoothie

We are definitely feeling Mr. Suns’ heat here in the sandpit. The weather is still nice enough to stay outdoors and enjoy some smoothie. Stored some on our Sili Squeeze for Vs school lunchbox. Banana Raspberry Smoothie Recipe: 1 ripe Banana 1 cup Raspberries (I had frozen ones from our fruit market stash) 1 1/2 cup Yoghurt 1/2 cup Milk 3 tbsp Honey 1 cup ice cubes (if you’re not using frozen berries) 1 tbsp Chia seeds Blitz everything in your blender. Sprinkle some chia seeds and serve.

Yummy Chocolate Chip Cookies

While shopping for our weekly grocery Vierte asked if he can buy some chocolate chip cookies. I said nope and promised him that we make some cookies together. C was teasing me that I still haven’t made the cakes that they both requested. See after making Mickey Mouse cake for Liam and watching Cake Boss every night V’s long cake request includes McQueen, Dog, Sesame Street, and Disney cake. For now he was happy to help me make Hershey’s Chocolate Chip Cookies which is also one of the first bake goodies I made some years ago. Also when my Lola Mommy turned 80 years old, we (Mama, Badet and I) baked a 5 dozens of these and everyone just loved them cookies! Lola even kept a tupperware full of cookies hidden in her closet. Oh how I miss her!   After showing Vierte how to scoop some cookie dough, roll on chocolate chips then transfer on baking sheet he decided to use the cupcake tray. Emirati Recipe: Lamb Makhtoum

What better way to appreciate the culture where we live if we don’t at least try their dish. If I can’t speak Arabic might as well learn to cook local dish. Even before being part of FIA I have been reading Emiratican Kitchen and have bookmarked her recipe for Chicken Makhtoum. She noted on her post that lamb would be a delicious substitute to chicken. When I told C that we’re having a local dish for dinner he immediately inquired if I prepared an emergency backup meal in case they won’t like it. Nope I don’t have any backup and they can order take out. I already know that Little V liked the lamb dish because he was beside me all the time tasting and checking if it’s yummy or not. FIA Recipes: Mango Japanese Cheesecake

FIA (famished in Arabia) is a group of food bloggers, you can find links to their blogs by clicking on FIA tab. Visiting each site has become a morning ritual and it’s kinda good and bad for me – I end up hungry after each visit  and my list of recipes to try has piled up. With a whole lot of recipes to try it’ll be a waste if they only end up printed and not created at all. That’s why I decided to try at least 1 recipe a month from FIA. Summer = Mangoes!
