Easy Coconut Macaroons

These little coconut macaroons are addicting and really easy to make. We can’t stop popping one macaroon after another and pairs well with coffee or tea.

We packed these macaroons as a ‘thank you’ gift to all our guest’s during LittleMiss’ baptism. I made few changes from my original recipe here.

Easy Coconut Macaroons

  • 3 cups desiccated coconut
  • 395 gms (1 1/2 c) sweetened condensed milk
  • 1/2 cup melted butter
  • 3 eggs
  • 1/2 tsp vanilla

In a mixing bowl beat eggs and add the rest of the ingredients.

Fill each mini cups with the coconut batter until 3/4 full. Bake in 180C oven for 20-30 minutes or until the tops are golden brown.

Cool for 10 minutes.
