Wilton Method of Cake Decorating Course 1, Day 2

For the 2nd session of our Wilton Method of Cake Decorating Course we were asked to prepare a firm 8″ cake, 2 recipe’s of buttercream, piping gel and cake filling. I prepared all of these Thursday evening because we have a busy weekend, every thing was stored in the refrigerator and thawed Friday night for my class the next day. I was not feeling well for my class, didn’t get enough sleep trying to fix my iPhone which got stuck to Error Code 53 after doing the latest ios update. My iphone 6 still not working, Argh! That’s another story to tell, back to my class. Ms. A (our teacher) showed us how to: level a cake using a cake leveler separate cake in two create a dam place filling apply a crumb coat final coat and smoothen surface I have done the following task before, it felt good that even if I’ve never attended a class prior to this one I was actually doing it correctly. Wilton Method of Cake Decorating Course 1, Day 1

Baking cakes and decorating is something that I’ve learned from friends and watching videos online. I have always wanted to enroll myself to a cake decorating class ever since we moved here in Dubai, but never found time. I finally made time to enhance my cake decorating skills and enrolled to The Wilton Method of Cake Decorating Course 1 – Building Buttercream Skills. Although I have been baking cakes, decorating them completely with just buttercream scares me. The only cake I decorated not using fondant is my ube cake and I hide my cupcakes buttercream imperfections by adding sprinkles.   Inquired about the class schedule at Wilton’s Gold and Diamond Park store and it was perfect for us. My LittleOnes and Daddy C urged me to enroll right that moment with the assurance that they will be ok without me.

We’ve been hit by a nasty flu this past week, thankfully all of us are now feeling great. Arroz Caldo is a simple dish that is hearty and comforting.         This dish is made during the cooler months or when someone is sick. It is usually made with a mix of glutinous and regular rice, chicken, garlic and lots of ginger. I’ve made a healthier version by adding white quinoa to rice. Philippines has a big Chinese population and we have inherited a lot of their traditions. Binondo is the capital’s China town where you can find the famous Eng Bee Tin which sells traditional Chinese sweets like hopia, ampao rice, mooncake and tikoy. Celebrating Chinese New Year is not complete if one doesn’t get to eat tikoy (Nian Gao), coated with egg and fried. Consider yourself lucky when you receive one as a gift because it means that the person wishes you luck. In Dubai we can’t find any stores selling Nian Gao, worry not because it is easy to make.

We have a bad case of sniffles this week, it all started when Daddy C was away on a business trip. I should really start taking driving lessons soon, we had to wait 30 minutes for a cab to pass by outside the hospital. Hungry sick kids and no cab just spelled tantrums. Bulalo soup is a bone broth stock that is very simple to make and just require patience if you want to do it the traditional way. The key to a tasty broth is simmering beef bones for hours. Dubai’s cold weather is just the perfect time to enjoy a warm soup. We had this for lunch paired with tuyo and cooked jasmine rice.

Simbang Gabi and How to make Bibingka

We have spent 5 Christmases as an expat family here in Dubai. It is during this season that we get homesick with all the festivities happening in the city and back home. The last time my mom, siblings and I celebrated Christmas together was 2006. Today, December 16 marks the first day of Simbang Gabi (Misa de Gallo)  which marks the official countdown for the grand Christmas feast. Although simbang gabi literally means night mass, Filipino Catholics wake up early morning (5 am) for nine consecutive days to join the celebration of dawn mass. It is also believed that when you complete nine dawn mass, your wish will come true.
