Kuya V’s 8th Birthday

Last week, our eldest Kuya V turned 8 years old and this year we all decided not to organize a party, instead he asked that we do several things he really liked. His birthday weekend coincided with the Islamic New Year which meant we had Thursday till Saturday to celebrate.

  • First thing to do on the list is play and have picnic at the beach. We did just that with our Filipino blogging family here in Dubai.

  • A wheelboard – We know that he really likes one but it’s too expensive and I find it dangerous. Luckily, I won an instagram competition hosted by Fun City – come, play!

He can use the board indoors and always wearing a helmet.

  • We watched the movie Pan at Vox Cinema at the newest wing of Mall of the Emirates.

  • iFly with Dad – a self challenge to conquer his fear of heights iFly Dubai.

Last year he promised us and challenged himself that when he turns 8 years old he will try to conquer his fear of heights and do iFly. Dad and him were the last ones to fly, watching others do it first really scared him. We’re really proud of you Kuya!

  • He requested that we have brunch, while planning were to go an email invitation to experience Mövenpick Hotel Jumeirah Lakes Towers Friday Double Brunch – Thai Feista pop in my mailbox. Perfect timing! This is our third time brunching at Mövenpick JLT and we have always liked the relax vibe at Nosh restaurant, also the kids are big fans of their powerbites creation.   • Skylanders: SuperChargers – a yearly gift from Lolo Dino since it’s release. He get’s away from getting the latest edition because it gets released on his birthday month. Last year, he requested a cake base on Skylanders and it was a hit!

  • Ultimate candy chocolate cake baked by Mama. Baking cake for his birthday has been a tradition and I’m planning to do it until I can, you can his previous cakes here. We made two cakes, one for the park and the other one was shared with his basketball friends at Skywalker Clinic. He bought the world’s largest gummy bear at a candy store in Kansas city using the money he earned from mowing the grass. I initially planned to place the giant gummy bear on top of the cake but I did not have the dowels needed to make it stand, so we settled on displaying the bear beside the cake.

A week with BentGo Kids Lunchbox + Giveaway

It has been 1 month (plus) since school started and I’m still obsessing over getting the kids new lunchboxes and more bento tools for me to play around. Easy to open and drop proof design, the box has 2 latch that can easily be opened by my 3 yr old and it has rubber coated edges that is great for active kids who tend to always drop things when in a hurry. My son’s group gather for school break and sometimes play this game called “hey catch this”, where they call out another person and throw random objects for that person to catch, most of the time that object is the lunchbox. It has 5 compartments; one large that will fit your main meal of half cut sandwich, rice or salad and 3 medium compartments for meat, fruits, vegetables, yoghurt or cookies and one tiny round compartment for ketchup, sauce or a surprise sweet treat. I will always prefer packing school food in a compartment style boxes because it eliminates the need for bags and incidents where the kids come home with a missing lid. It also reminds us to pack a balance meal for them since you need to fill all compartments, admit it when your staring at a square box we have the tendency to just put it 1 food item inside.

Age recommendations for the lunchbox is from 3yrs to 7yrs old but we find that it is just the right size in their limited (25 minutes) lunch break. My son is turning 8 yrs old this month and has medium to big appetite but does not come home complaining that he got hungry for the rest of the 4 periods after lunch. I always pack him additional bus food, a cereal bar or sandwich for him to eat on their 30 to 45 minutes drive home. BentGo Kids is smaller compared to our existing compartment style lunchbox but when you fill it with a well balanced meal it can hold a good amount of food.

Banana Oatmeal Cupcake

Banana Oatmeal Cupcake

I buy a bunch of bananas and wait for them to ripen, have that beautiful zebra spots. My LittleOnes know that ones they see spots it’s time to make smoothie, bread or cupcake.

The cupcakes are great to pack for school baon or afternoon snack, bake them and store on the refrigerator.

Banana Oatmeal Cupcakes

Ingredients:

  • 1 3/4 cups all purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup oatmeal
  • 1 teaspoon ground cinnamon
  • 2 large eggs, room temperature and lightly beaten
  • 1/2 cup softened butter
  • 1/2 cup laban milk (you can also use buttermilk or fresh milk)
  • 4 large bananas (about 1 1/2 cups), mashed
  • 1 teaspoon vanilla extract
  • Chocolate Chips (optional)

Procedure:

  1. Preheat oven to 180 C (350 F). Prepare cupcake pan with liners.
  2. Sift all dry ingredients – flour, sugar, baking powder, baking soda, salt. Mix in chocolate chips, oatmeal and cinnamon – in one bowl.
  3. In a separate bowl mix bananas, eggs, butter, milk and vanilla extract.
  4. Slowly pour in the wet ingredients into the dry ingredients and lightly fold. Don’t over mix it does not have to be really smooth.
  5. Scoop batter to your cupcake tins.
  6. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean.

2015 Bento Week: September 13 – 17

This was quite a challenging week, I was not feeling quite myself – no energy to get up early in the morning and do chores the rest of the day. I’m just happy we survived yet another week, we have food on the table and healthy.

We have a messy looking turkey ham and cheese rolls, apple slices, steamed sweet corn and yakult.

Baked chicken katsu the night before for today’s bento.

Kuya V went to school with a chicken katsu onigirazu, sugar cookies, apples and watermelon balls.

Made use of left over salmon from last nights dinner and made fried rice.  LittleMiss asked that I pack her some Hello Kitty bread and cheese and as always a yoghurt milk. We use a Goodbyn lunchbox here.

Kuya V’s lunch was packed in a Thermos Funtainer which was filled with Salmon fried rice and meatballs with Bolognese sauce. A banana and nutella bread for him to eat inside the school bus.

I could not drag myself out of bed early this morning, Daddy and Kuya had to eat breakfast at McDonalds. Kuya V was dropped to school with 10 dirhams in his pocket to buy food at the canteen. LittleMiss wanted to go to school, I beg her not to because Mama was not well. Prepared some puto cheese the other day for today’s bento so I packed that for her with grapes, yoghurt with strawberries and milk.

After a day’s rest, I am finally back to my old self. For Kuya V’s lunch – puto cheese, grapes, banana nutella French toast and milk. He came home complaining that the French toast was soggy and did not like that it was not warm.

At LittleMiss’ nursery they were learning shapes and letters this week so I prepared a cut out French toast with honey glazed strawberry and banana plus vanilla flavored yoghurt.

Family date night and Truffles at Rosso, Amwaj Rotana

We were invited by Amwaj Rotana to dine at their Italian restaurant Rosso. It’s truffle season and they have a special menu featuring the diamond of the culinary world. I was very excited for my bunch to try real shaved truffles, they have only tried truffle infused oil on pasta’s I cook at home.

The bar area was already full at 7:30 pm that Friday night, we sadly did not have the option to dine al fresco because of the sandstorm. We walked past the busy bar to the sitting area which had a good view of the kitchen. My LittleOnes always like to see the chef’s prepare the food so that kept them busy while we browsed the menu. Dad and I was settled to try their truffle dishes while the kids asked for pizza, steak and chicken.

A complimentary basket of bread with butter and olive paste was served. For starters we had Beef Carpaccio Manzo with Black Truffles and AntiPasto Misto. The carpaccio was good start to our night, the dish had a good amount of truffle for us to taste. My 7 year old tried the carpaccio with and without the truffles, he has this to say “The truffles make the food taste beautiful inside my mouth.”  AntiPasto Misto was a platter of Italian pork cold cuts, Buffalo Mozzarella, bruschetta with tomatoes and grilled vegetables – we were expecting that it would offer more cold cuts than vegetables, it was large enough for two people to share.

I wanted the LittleOnes to have their meat for dinner but both insisted they order the Four Cheese Pizza/Quattro Formaggi they were so happy with each bite that I had to stop them from having more so they would have room for their main meal. LittleMiss had Honey Glazed Chicken Supreme with specific instructions that the glaze be serve on the side, the chicken was juicy and seasoned well. She tried the eat it with the sauce but was happier without it. As expected Kuya V ordered a steak dish, Wagyu Beef Striploin with Rocket and Shaved Parmesan cooked medium rare – a melt in your mouth bursting with flavor Wagyu steak, definitely deserve 10 stars. He quickly noted that he want to eat this again on his birthday next month, with a request that he gets to have two plates of steak.

The presentation of Daddy’s Pan-seared Scallops was so pretty I wanted to just stare at it. It was not just pretty but also tasty, this dish made the husband appreciate black truffle. Yes, the scallops was seasoned well but when you eat it with the truffles the taste is elevated to something more – my son would say truffles make food taste beautiful. I had the Duck and Mushroom Ravioli, the red wine reduction was delicious and I wanted more of it. Daddy found the filling was too mushy for his liking, I was happy with the texture but would prefer more duck flavor on it.   

On to Dessert! We had to wait a while before our sweets were served, which was ok since we needed time to rest our tummies. Dad ordered espresso with his Decadent Layered  Cake with 8 textures of Chocolate, it was indeed a festival of chocolate in your mouth! Kuya V ordered the chef’s special dessert a Cherry Tart with Pistachios Ice cream which he shared with LittleMiss who immediately claimed it was just all for her. My Hazelnut Profiteroles went well with my coffee, a generous hazelnut filling makes you want to have more. Dad’s layered cake won the votes that night.

Overall, it was a really good dining experience. The servers were polite and kept us updated on instances that it took time for the kitchen to prepare what we ordered, the restaurant was full. Our waitress gave suggestions base on what we were craving that night, she also suggested we try their cocktails, mocktails and wine selection but we were happy with our sparkling water. The only thing that bothered me was that there was no direct access to the dining area from the terrace that night (there was a sandstorm), we had to pass by the bar and people were smoking – I have two kids and want to shield them from the smoke during our trip to the restroom. If you have younger kids (mine are ages 7 yrs and 3 yrs) the loud music from the bar might bother them, LittleMiss complained it was noisy when she was done eating. The manager said that the doors to the terrace is usually open when the weather permits. Dining al fresco for dinner time at Rosso is ideal for families with children, you have more room for stroller and do not need to pass by the bar when you seat outside.

2015 Bento Week: September 6 – 10

Second week of school and we are getting into the groove. I should really plan a week worth of packed lunch for the bunch but still procrastinating in doing one, hopefully before the month ends.

Here’s our bento baon for the week.

Sunday

We had fish tempura for dinner and the LittleOne’s loved it, they requested that I pack it for their baon this week. My one concern is how to keep tempura crispy by lunch time, recipe and tips on how to keep it a bit crispy, here. Inside our goodbyn we have fish tempura + ketchup, sweet corn, mandarin oranges.

 

Monday

Kuya V shared over our tea time that most of his friends only pack 1 food in school while he has lot’s of choices and thanked me for giving him a good baon. I told him that his bento today will remind him to always eat his school food or else Mama’s mood will be grumpy. We packed sweet ham, rice, boiled egg and waffles inside our smash box containers bought at Centrepoint.

Breakfast for lunch – rice, bacon, hotdogs, banana and oreo’s. I clearly didn’t prepare for today’s bento and just packed what we had for breakfast that morning. Drew a face on the banana skin to make it fun.

Kid’s requested for pancake/waffles again. Filled our planetbox rover with longganisa, watermelon balls and cinnamon sugar waffles.

LittleMiss is off to school this week and she specifically asked for pancakes. Prepared a bear family pancakes, watermelon balls, and yoghurt milk.

 

Thursday

Kuya V gets off early from school every Thursday, which means that he will eat lunch at home. Inside our planetbox we have four cheese pizza, sugar cookies, strawberries and strawberry banana smoothie. LittleMiss bought the same set of food in school except for the pizza.

Meeting Hollywood Stars at Madame Tussauds

After a few days in Los Angeles we took a road trip to Las Vegas to meet my Uncle B, Ceasar Palace is our home during this stay.. He’s the younger brother of my Papa and took on the role of being a father for me and my siblings since my Papa passed away. Spending time with him was the main reason why we decided to spend our summer in the USA, he’s planning to retire soon and want to show us what was life like there.

He is Lolo Dino to my children and he does a good grandpa job. Oh how he spoils them.

We initially planned to just spend 3 days in Vegas but he convinced us that the kids will have fun with all the theater shows so we extended our stay to five days. I think that he just really want to spend quality time with them where it’s only him showering them with attention.

He planned our itinerary, first stop was Madame Tussauds.

It was our first time. The figures look so real, it was scary! LittleMiss was so scared and kept asking why the people were not moving. Kuya on the other hand poke each figure and had fun acting even if he was not familiar to most of them.

It took a while for LittleMiss to accept the fact that the figures are toys just like her dolls at home. This is the first time that Lolo and LittleMiss met and it took her a while to be comfortable around him.  She saw her Lolo Dino play golf and asked if she can play too.

After the golf game, she now had fun role playing with the dolls.

It’s boring to just go inside and take photos with them, so we acted out scenes and had so much fun.

We were probably one of the active group in the place. The visitors saw us having so much fun playing that we noticed them doing the same.

Fish Tempura

Fish Tempura

We like crispy crunchy food. My picky eaters tend to eat vegetables it’s cooked tempura style.

Kuya V has been requesting to have tempura packed in his bento, but I always have the issue of keeping them crispy by the time he gets to school. I read somewhere that the secret to make tempura crispy for a long time is to drain the oil as much as you can and pack it the container only when it’s in room temperature.

Fried and drained them in a colander then to a paper towel. Kuya V came home happy to report that the tempura was still a little bit crispy on some side.

Fish Tempura

Ingredients:

  • Fish Fillet (I use Cream Dory), cut in strips. Pat with paper towel to dry.
  • salt
  • pepper
  • five spice
  • tempura batter
  • oil

Batter

  • 1 egg
  • cold water, about 3/4 or just enough to make 1 cup when mixed with the egg.
  • 1 cup all purpose flour

Japanese Tempura Flour

Alternatively, you can use a store bought Tempura flour at your nearby Asian store. I bought this pack at Fujiya Supermarket, Oud Metha.
Sauce

  • 1 cup dashi broth (mixture of 1 tsp dashi powder + water)
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 1 tsp sugar
  • drop of sesame oil (optional)

Procedure:

  1. In your deep fryer or a pan heat about 2 inches of oil.
  2. Mix all ingredients for sauce and cook over low heat till sugar is completely dissolve.
  3. Crack egg in a measuring cup, whisk. Add enough water to make 1 cup, mix. Strain this mixture to remove egg lumps.
  4. Sift all purpose flour on a separate bowl.
  5. Slowly pour egg water mixture to your flour, lumps are ok.
  6. Coat fish in batter.
  7. Deep fry until golden brown. Once cooked, drain oil from fish on a colander make sure you have enough space between them. When your next batch of fish are cooked transfer 1st batch to a plate lined with paper towels.
  8. Pack in your lunchbox only when tempura is completely cold.
